Cendol (Shaved Ice with Pandan Jelly and Coconut Milk)
Shaved ice layered with pandan-flavored green jelly, red beans, palm sugar syrup and cold coconut milk.
Cendol is sold from carts and kopitiam stalls at the hottest hours of the day, built up in layers of shaved ice, green pandan jelly and sweet red beans. The assembly order decides whether it works: syrup goes on first, coconut milk last, so the drinker pulls sweetness through the ice themselves. Bowls are rinsed with ice water before serving, which keeps the mound from collapsing too early.
