Apam Balik (Malaysian Turnover Peanut Pancake)

Apam balik is a folded pancake whose thickness and topping have become a regional argument — Penang versions bury the peanut in sugar, Klang versions stay flat and buttery. The batter is spread thin and cooked fast so the underside crisps before the filling goes on. The fold itself is done at the edge with one hand, a skill stall cooks pick up young.
