Pastilla de Poisson (Moroccan Fish Pastilla)
Fish and potato wrapped in thin pastry, glazed with cinnamon sugar.
Pastilla de poisson is the coastal version, and it drops the sugar and cinnamon in favour of seasoning that suits the fish. The dough is wrapped around potatoes and fish together, and it is eaten as a main course with salad rather than as a sweet. The pastry has to be thin enough to see what is inside, which is the practical test of a good one.
