Chebakia (Moroccan Sesame-Rose Fried Cookie)
A rose-shaped sesame cookie fried until crisp and dipped in honey-rose syrup.
Chebakia is a festival cookie, most often eaten at Eid, and the rose-shaped form is the traditional one. The dough is rested for a long time so the sesame is evenly distributed, and the rings or coils are fried until crisp and then soaked while still hot. Passing one piece at a time from hand to hand is part of how they are shared.
