Boucha (Moroccan Fried Dough Sticks)
Crisp fried dough sticks rolled in sugar and spice.
Boucha are the leftovers given a second life, and a Moroccan kitchen keeps them on purpose. Strips of yesterday's dough are fried until they puff and colour, then rolled in sugar with a little spice. They are sold from market stalls in bundles and eaten on the way somewhere, which is the closest thing the country has to a pastry for its own sake.
