Rakakat (Lebanese Cheese Rolls)
Crisp filo rolls filled with halloumi or cheese and herbs.
Rakakat are shop pastries rather than home cooking, and they are best bought in small batches because they go soft fast. Filo is rolled with cheese and herbs, then fried so the layers stay distinct and audible when you bite. The cheese should still taste of something, usually a salty one, underneath.
