Mhalabiyye (Lebanese Milk Pudding)

Mhalabiyye is served cold and that is a real constraint, not a preference. The pudding has to set without skins forming on the surface, so it is covered as it cools, and orange blossom water is added once the heat has dropped. It is a light end to a heavy meal, and it is poured rather than scooped.
