Manakish Za'atar

Manakish za'atar is the shape breakfast takes on a morning market, folded and sold by the piece. The dough is yeasted and soft, and the za'atar is mixed into oil so it does not scorch before the bread is finished. Olives and white cheese go alongside rather than on top, and they are eaten between the pieces, not with every bite.

Ingredients

  • all-purpose flour450 g
  • instant yeast5 g
  • sugar5 g
  • salt6 g
  • warm water240 ml
  • olive oil60 ml
  • za'atar spice blend30 g

Directions

  1. 1

Combine flour, yeast, sugar, salt, water and a glug of oil and knead into a soft dough; rest until puffy.

Dough has roughly doubled and springs back slowly.
  2. 2

Divide the dough and press each piece into a thin round.

    Rounds are thin and even.
  3. 3

Mix za'atar with the remaining olive oil to a spreadable paste and spread over each round.

Paste spreads easily and clings to the dough.
  4. 4

Bake until the dough is blistered and the za'atar topping is set and fragrant.

Base is dry and crisp; topping is set and aromatic. Cook the za'atar topping until set.
