Halawet el Jibn (Lebanese Semolina and Cheese Rolls)

Halawet el Jibn is a sweet course that behaves like a pastry and is eaten as one. The semolina pastry is very short and must not be overworked or it will lose its shattering texture. The cheese inside is mild and soft, and the syrup arrives after baking rather than during, so the pastry stays crisp when it is served.
