Torta della Nonna (Italian Grandmother Cake)
A soft lemon cake filled with pastry cream and candied lemon.
Torta della nonna carries the most affectionate name in Italian baking, and the cake inside it is deliberately soft, almost custardy. Lemon zest and juice run through both the crumb and the pastry cream that fills it, and candied peel repeats the citrus. It is a home celebration cake that never needed frosting to prove anything.
