Pav Bhaji (Mumbai Vegetable Mash with Buttered Buns)
A spiced vegetable mash served with butter-toasted pav buns and chopped onion.
Pav bhaji is Mumbai street food born from a need to use up leftover cooked vegetables, which were mashed and spiced into a rough bhaji and sold by the plate. The pav rolls, brushed with butter and warmed on the griddle, are what made the combination work as a meal. Assembling it yourself is the point: spoon the mash, add chopped onion and lemon, and press the two together.
