Kheer (Indian Rice Pudding with Cardamom)
A slow-cooked rice pudding thickened with milk and scented with cardamom.
Kheer is what a South Indian kitchen does with leftover rice, simmering it down in milk with jaggery or sugar until the grains lose their shape. It is a cooling, faintly sweet dish served at festivals and at the end of a wedding meal. The reduction takes patience and constant stirring, and stirring less is exactly how the bottom catches and scorches.
