Gulab Jamun (Indian Fried Milk Dumplings in Syrup)
Soft milk-solid dumplings fried golden and soaked in rose-cardamom syrup.
Gulab means rose and jamun refers to the dark fruit of the ber fruit, a word that also happens to describe these small fried milk dumplings. They are made from a dough of milk solids, a little flour and cardamom, and the result should collapse entirely in the mouth. Syrup kept warm rather than boiled is what lets them drink in the flavour without ever becoming soggy.
