Chicken Tikka (Yogurt-Marinated Grilled Chicken)
Chicken thighs marinated in yogurt and spices, grilled until charred and juicy.
The yogurt marinade is not just for tenderness; its acids seal the surface so the chicken does not dry out in the tandoor's punishing heat. Because it is cooked hot and fast, tikka rewards a good marinade and very little else. Resting the pieces in the yogurt overnight is the step that separates a home cook's tikka from one that is merely edible.
