Spanakopita (Greek Spinach Pie)

Spanakopita is all about keeping the spinach dry, since any water in the filling makes the filo go soft underneath. The cheese and spinach are squeezed together before they go in, and the layers are brushed with oil rather than butter so the pastry stays crisp while it bakes. It is served at room temperature.
