Keftedes (Greek Meatballs)
Herbed meatballs pan-fried and served with lemon and tzatziki.
Keftedes are made by hand and that is not a stylistic choice, since a food processor gives a different, more uniform result that many people prefer. The mixture is rested so the breadcrumbs drink up the meat juices before it hits the pan. They are fried in batches so they do not steam each other.
