Cock a Leekie (Scottish Leek and Potato Soup)
A thick, peppery leek and potato soup finished with cream.
Cock a leekie is the leek and potato soup that a cook makes when the cupboard is nearly bare, and it was strong enough to keep a cold body working outside. Pepper is the seasoning that matters, in generous quantities and early. It thickens on its own as it cools, so it is thicker the next day than it was at the table.
