British Fish and Chips with Mushy Peas

Mushy peas are not a side dish so much as a component, and they are the argument that the fish and chip shop has won over the mushy pea purist. The peas are dried, soaked and cooked down with a little mint and butter until they collapse. Salt and vinegar go on both, and the order of shaking is not fixed.
