Bakewell Tart (British Almond and Raspberry Tart)
Shortcrust lined with raspberry jam, almond sponge and icing.
The Bakewell name belonged to the town whose mayor allegedly ordered the version with almond sponge instead of the jam-and-almond paste, which is why the filling is layered rather than mixed. The raspberry jam goes in first and must be a layer thick enough to keep the almond sponge from drying out. Almond icing goes on while the tart is still warm.
