Tarte aux Fraises (French Strawberry Tart)
A crisp pastry shell filled with custard and fresh strawberries.
A strawberry tart puts fresh fruit on a pastry shell, which sounds simple until you see how quickly the pastry softens under a wet filling. The custard is cooked and the fruit added afterwards, and the tart is assembled close to serving. Shining it with glaze is what makes it look the way a shop tart looks.
