Pot de Creme (French Chocolate Pudding)
A silky chocolate custard served in small pots, chilled until set.
Pot de crème is the everyday version of a chocolate dessert, richer than a pudding and firmer than a mousse. It is set in small pots and eaten cold with a spoon. Being cooked gently matters, because a hot custard goes grainy and nothing brings it back.
