Galette Bretonne (French Buckwheat Savoury Crepe)

Galette bretonne uses buckwheat because it grew in Brittany rather than because of any modernist intention, and the dough has to rest so the bran can hydrate. The filling is folded rather than combined, so it stays a flat crepe. Cooked through, it becomes a meal instead of a snack.
