Creme Brulee (French Brulee Custard)

The name says everything about the dish, and the technique is the reason it survives. Custard is barely heated so it stays silky, and the sugar is caramelised on the surface with a torch or under fierce heat. The contrast of cold cream and hot brittle top is served intact, never spooned in advance.
