Atkilt (Ethiopian Cabbage and Potato Stew)

Atkilt is a pot of cabbage, potato and carrot with a light hand on the spice, closer to a vegetable side than to a stew that would stand on its own. Turmeric gives it colour without weight, and it is finished with butter once the fast is over. Searing the onion properly before any water goes in is what keeps the whole pot from tasting watery.
