Tarta de Santiago (Spanish Almond Cake)
A flourless almond cake dusted with powdered sugar.
This almond cake is baked in Santiago de Compostela and marked on top with the cross of the pilgrim, and it is made almost entirely of ground almonds, which is why it stays dense and keeps for weeks. Pilgrims once carried it home from the cathedral, and bakers still bake to that same custom. Beaten egg white gives it lift without loosening the crumb.
