Leche Frita (Spanish Fried Milk Pudding)

Leche frita survives from convent kitchens, where milk was set into a firm custard, cut into squares and fried so that the outside caramelised while the middle stayed soft enough to tremble. Cinnamon and the crust that forms in the pan are most of its character. It is at its best served warm and just after frying, when the contrast between the two textures is sharpest.
