Churros con Chocolate (Spanish Fried Dough with Hot Chocolate)
Crisp ridged fried dough sticks rolled in cinnamon sugar and served with thick hot chocolate.
Churros belong to early morning at a Spanish churrería, when they are still warm and the thick chocolate can almost stand a spoon in it. Madrid eats them by the armful during the San Isidro festival, and the custom there is to dunk rather than sip. They are crisp outside and tender within only for a short window, so they are worth eating immediately rather than saving.
