Schwarzwälder Kirschtorte (Black Forest Cherry Cake)

The Black Forest cake borrows both its name and its cherries soaked in Kirschwasser, a cherry brandy brushed into the sponge so the cake stays damp for days. Kirschtorte was sold as a speciality cake long before it became a restaurant standard, and the whipped cream between the layers is not optional. Storing it too long dulls the cherries right through.
