Rouladen (German Beef Rolls with Bacon and Pickle)
Thin beef rolls stuffed with bacon, pickle, onion and mustard, braised in a dark gravy.
Rouladen is a German Sunday dish, where thin beef is rolled around bacon, onion and a pickle and then braised in dark gravy until it can be eaten without a knife. The pickle inside is not a garnish but the reason the roll holds together and stays savoury. Tying each roll loosely is what keeps it from opening in the pan.
