Rote Grütze (German Red Berry Compote)

Rote Grütze is a northern compote of red berries, served with vanilla ice cream or a bread dumpling, and it is one of the few German dishes that foreigners reliably recognise. Cooking the berries with enough sugar draws out their own pectin, which is what sets the compote without any thickener. Straining it removes the seeds, and some cooks consider that the best part.
