Maultaschen (Swabian Stuffed Pasta Parcels)
Pasta squares stuffed with spinach, smoked meat and bread, simmered in broth.
Maultaschen are Swabian pasta parcels filled with spinach, smoked meat and bread, and the name is often traced to mulden, the shallow mould the dough was pressed in. They are filled only after boiling so the skin does not break on the way in, and boiled again until they swell. Served in clear broth, they make a cold-weather first course.
