Lebkuchen (German Gingerbread Cookies)

Lebkuchen are the German answer to gingerbread, baked for Advent and sold by the heart at Christmas markets, which is why they come in those shapes. The dough leans on honey, nuts and spices rather than on flour, and it keeps for weeks without going stale. A sugar glaze goes on while the cakes are still warm, so that it sets into something like a thin shell.
