Gulaschsuppe (German Goulash Soup)
A paprika-rich beef and vegetable soup, a Hungarian-influenced German classic.
Gulaschsuppe is the German descendant of a Hungarian dish, and the difference shows in the finish: the German version is often a soup, while the Hungarian original is a stew served with bread. Paprika is the only spice that really matters, and it goes into hot fat rather than a cold pan so its colour survives. Sour cream on top is a matter of region.
