Döner Kebab (Berlin-Style Stuffed Flatbread)
Spiced lamb and chicken shaved from a vertical spit, stuffed into flatbread with slaw and garlic sauce.
Döner reached Berlin with Turkish workers in the nineteen-seventies and quickly became the city's late-night staple, eaten standing up and wrapped for the walk home. The spit turns all night and the meat is shaved to order, thin enough to soak sauce into the bread. What goes inside matters far less than how much sauce does, which is an argument held in every city.
