Poutine Caribou (Canadian Maple Cream Puffs)

Maple cream puffs are a Quebec pastry counter staple, assembled from choux dough filled with a maple-scented pastry cream and dusted with maple sugar. The name carries a different meaning north of Quebec, where caribou is the hunted animal, but the pastry itself has no connection to it. They are made fresh because the choux collapses quickly once it cools.
