Poutine (Canadian Fries with Cheese Curds and Gravy)
Crispy fries topped with squeaky fresh cheese curds and hot beef gravy.
Every region argues for its own version, and the gravy is where the real dispute lies: thin and clear in some towns, dark and thickened with gravy mix in others. Whatever the camp, the rules are the same. Fresh curds go on last, and a diner who reverses the order gets the silence of a disappointed counterman.
