Pork Pie (Canadian Pork and Egg Pie)
A flaky raised crust filled with pork, egg and mustard.
A raised pork pie is one of the oldest forms of the British pie, older than the flaky pastry versions that followed it, and the hot-water crust is what keeps the filling moist through a long bake. Egg goes into the filling rather than only on the lid, which is why the top stays tender. It is picnic food that survives being carried.
