Butter Tarts (Maple Syrup Custard Tarts)
Flaky pastry shells filled with a soft-set custard of butter, sugar, egg and maple syrup.
This version leans on maple syrup to season a plain butter-and-egg custard, which is how many home bakers stretch the harvest flavour through winter. The trick is to bake the little shells on a tray and watch them closely near the end, since a tart that looks done in the oven can still collapse into a brittle puck. They travel well and are the easiest thing to bring to a potluck.
Ingredients
- all-purpose flour200 g
- cold unsalted butter, cubed120 g
- ice water60 ml
- unsalted butter, melted80 g
- brown sugar150 g
- pure maple syrup80 ml
- egg2 pieces
- heavy cream60 ml
- white vinegar or lemon juice1 tsp
Directions
- 1
Cut butter into flour, add water and bring together; chill, then roll and line a muffin tin.
Dough is chilled, holds shape and lines each cup without cracking. - 2
Whisk melted butter, brown sugar, maple syrup, egg, cream and vinegar until smooth.
Filling is homogeneous with no visible sugar grains. - 3
Spoon filling into each shell, about two-thirds full.
Each shell has the same amount and the filling sits below the rim. - 4
Bake until the filling is just set with a slight wobble in the center.
Surface is lightly caramelized and the center wobbles like soft jelly.
