Beaver Tails (Canadian Fried Dough with Cinnamon Sugar)

Stretched and fried at the national fair, these flat tails became a fixture of Ottawa street stalls within a couple of decades. The dough must be pulled thin enough to cook through before the outside burns, which is the whole skill, and the tail shape is decorative rather than useful. They are best eaten straight from the bag while the sugar is still melting.
