Pudim de Leite Condensado (Brazilian Condensed Milk Pudding)
A silky caramel condensed-milk pudding with a hole in the middle.
Pudim de leite condensado is the default Brazilian celebration dessert, and the hole left in the middle is a deliberate flourish from the ring mould. Condensed milk is boiled with egg and sugar until it passes the point where it thickens on its own, so the pudding is inverted hot onto the plate and the caramel runs down the sides. Timing is the whole skill, since a minute too long turns it grainy.
