Pao de Queijo (Brazilian Cheese Bread)
Chewy gluten-free cheese puffs made with tapioca flour.
The charm of pão de queijo is that it is gluten-free without trying to imitate wheat bread, so it pulls and stretches like a chew rather than crumbling. Tapioca flour gives the slight stickiness and the pale colour. They are best within hours of baking, and a baker will tell you plainly that a day-old one has stopped being what it was.
