Frango com Quiabo (Brazilian Chicken with Okra)
Braised chicken thighs with okra, tomato and onion in a light sauce.
Frango com quiabo is home cooking from Minas Gerais, and the okra is not a vegetable side note — it is there to thicken and to bind the sauce to the chicken. Cutting the okra too early and letting it cook down is what makes the sauce gluey rather than silky. Serve it with rice and beans, and plenty of time to sit down.
