Carrot Cake with Chocolate Glaze
Moist carrot cake topped with a glossy chocolate ganache — Brazil's comforting everyday bolo.
In Brazil a carrot cake is a home bake rather than a birthday cake, and it is judged first on moisture, because the carrot is grated and folded in wet. The chocolate glaze on top is poured while both are still warm, so it sinks into the crumb and sets as a thin shell. It is a bolo de cenoura, one of the everyday cakes sold in any neighbourhood bakery.
