Caldo Verde Brasileiro (Brazilian Kale and Sausage Soup)
A bright kale and sausage soup thickened with potato, finished with olive oil.
Caldo verde exists because of the colder southern states, where kale grows and the season turned soups into something substantial. Sausage browned first and mashed potato give the bowl both body and salt, so the dish needs very little else. It is an evening dish for cold nights, served in a mug with olive oil poured over the top.
