Brigadeiro (Chocolate Fudge Truffles)

Brigadeiro is the sweet that shows up at every Brazilian birthday party, usually rolled by hand on a platter while the children watch. Rolled in chocolate sprinkles rather than dusted with cocoa, it is deliberately small, dense and eaten in one or two bites. The texture comes from stirring condensed milk over heat until it pulls away from the pan, which is the part home cooks judge by feel.

Ingredients

  • sweetened condensed milk400 ml
  • unsalted butter30 g
  • cocoa powder50 g
  • chocolate sprinkles150 g

Directions

  1. 1

Whisk condensed milk, butter and cocoa in a heavy pan over low heat until thick and glossy.

Mixture pulls away from the pan and a spoon leaves a clean trail for 2 seconds.
  2. 2

Pour into a buttered dish, cover and cool until firm enough to roll.

Mixture holds its shape when scooped and feels cool to the touch.
  3. 3

Grease hands with butter and roll the mixture into small balls.

Balls are smooth, glossy and uniform in size.
  4. 4

Roll each ball in chocolate sprinkles to coat completely.

Every surface is covered with a uniform layer of sprinkles.
