Brigadeiro (Brazilian Chocolate Truffle)

This brigadeiro is the version most Brazilian households make without a recipe, judged by a simple rule: the cooked mixture must come away from the pan in a clean sheet without tearing. Rolled while still warm, the balls hold their shape and the sprinkles stick. They are small by design, meant to be eaten in company rather than as a solo dessert.
