Dressed lotus root with hot chilli oil
A cold starter of a Luoyang water banquet: lotus root sliced thin, blanched and cooled, then dressed with oil sizzling over peppercorn and dried chilli and a sweet-sour seasoning of black vinegar and sugar. Crisp and free of bitterness. Public reference · home adaptation, not a historical original.
Public reference · Home adaptation In Henan banquet language “liancai” means lotus root. Chan-qiang is a northern technique: blanch and drain the vegetable, then pour oil sizzling with peppercorn and dried chilli over it, which blooms the aromatics and drives off surface moisture while taming the bitterness of lotus root. Sweet-sour with a little heat is the flavour base of the water banquet, which returns to vinegar and pepper through several courses. This version is fully plant-based and is not the southern glazed sweet-and-sour lotus root. **The seat record and the name**: the published menu lists “dressed lotus root” fifth among the cold starters, while another common version calls the same slot “ginger-juice crisp lotus root” and describes peeled slices washed in water to remove tannins, blanched, cooled, then tossed with salt water, a little MSG solution, black vinegar, ginger juice and sesame oil; a public 炝莲菜 method instead finishes blanched slices with oil sizzling over peppercorn, scallion and dried chilli, then white vinegar, salt, sugar and MSG. Taking the seat's own name, this version uses the hot-oil aromatic base and adds ginger and vinegar, with no animal products. Slice thickness, sugar and vinegar ratio and blanching time are editorial for 4 servings. Text-reviewed, not kitchen-tested. Contains sesame (sesame oil). Entirely plant-based: no meat, egg, dairy or animal stock, so this is vegan. MSG, if used, is a fermented seasoning; whether that fits a vegan diet is a personal judgement. 百度知道:洛阳水席怎么做(转录洛阳好吃网席面做法) — The seat-level method for ginger-juice crisp lotus root: peeled thin slices washed to remove tannins, blanched, cooled, then tossed with salt water, a little MSG solution, black vinegar, ginger juice and sesame oil. https://zhidao.baidu.com/question/424155851027279692.html 下厨房:炝莲菜的做法(9度) — The aromatic-pour sequence for lotus root: blanch the slices, pour hot oil over peppercorn, scallion and dried chilli, then dress with white vinegar, salt, sugar and MSG. https://m.xiachufang.com/recipe/100583631/ 百度知道:洛阳水席24道菜的菜名是什么呀? — The seat of “dressed lotus root” among the eight cold starters. https://zhidao.baidu.com/question/558521656.html 河南省文化和旅游厅:烩面、胡辣汤、洛阳水席……这群“豫娃”,把河南美食唱成歌 — The official culture-and-tourism feature lists dressed lotus root among the water-banquet dishes. https://hct.henan.gov.cn/2026/08-15/3399309.html FDA: Food Allergies — Basis for declaring the sesame allergen. https://www.fda.gov/food/food-labeling-nutrition/food-allergies AI-generated illustration; not kitchen-tested.
Ingredients
- lotus root, peeled and cut into thin slices500 g
- water for soaking, blanching and cooling2000 ml
- Sichuan peppercorns3 g
- dried red chillies, cut into sections4 piece
- scallion, finely chopped15 g
- ginger, finely chopped8 g
- cooking oil for the aromatic pour40 ml
- white or Chinkiang-style black vinegar25 ml
- white sugar6 g
- salt2 g
- sesame oil to finish3 ml
Directions
- 1
Peel the lotus root and cut it into slices about 2 mm thick. Drop them straight into cold water, swish thoroughly twice to wash off surface tannins, rinse once more until the water runs clear, then drain.
- 2
Bring water to the boil, add the slices and blanch over high heat for about 1 minute until just cooked, then lift straight into iced water for 2–3 minutes and drain well. Blanching removes the raw, astringent edge; cooling locks in the crunch.
- 3
Put the drained slices in a large bowl and scatter over the scallion, ginger, peppercorns and chilli sections. Heat oil until it just begins to shimmer, fish out the peppercorns and pour the hot oil over the aromatics until they sizzle.
- 4
Wait about 30 seconds for the oil to cool slightly, then add the vinegar, sugar and salt around the edge of the bowl, add the sesame oil and toss gently from the bottom up so every slice is coated.
- 5
Plate and eat within 1 hour at room temperature, when the flavour and crunch are at their best. For storage, seal and refrigerate, draining excess liquid before serving.
