Split Mung Bean Dessert with Pandan
Split mung beans simmered until creamy, sweetened with pandan-scented sugar and topped with toasted sesame seeds.
Split mung beans are cooked until they fall apart into a smooth paste, and the whole skill is stopping them before they turn to glue. Pandan-scented sugar is the usual sweetening, and it colours the whole bowl faintly green. Toasted sesame on top is not a garnish but the counterpoint to the cool, soft texture underneath.
