Sour Pineapple and Tomato Vegetable Soup
Lightly sweet-sour broth with pineapple chunks, tomato, okra and straw mushrooms, finished with cilantro.
This is a home soup from the south, and the sourness comes from pineapple and tomato together rather than from tamarind, which makes it gentler and sweeter than the other Vietnamese sour soups. Okra and straw mushrooms are added because they thicken and soften without needing a roux. The whole thing is meant to be finished with a handful of herbs stirred through at the very end.
