Chao Ga (Vietnamese Chicken Rice Porridge)
A gentle chicken congee with thick softened rice.
Cháo gà is what a Vietnamese home turns to when someone has a cold or a tiring day, and the rice is cooked far past comfort into a thick, almost solid porridge. The chicken is simmered separately and its broth is used to cook the rice, which is why the bowl tastes of the bird rather than of grain. It is served with a fried egg and a few pieces of chicken, and eaten slowly in the morning.
